Waterside a restaurant and bar with a new stylish concept that enhances one’s dining experience, at Solaire Resort and Casino’s Sky Tower. This dining place showcases a unique flair. Waterside offers Latin American and Mediterranean cuisine in a casual and intimate setting.
The menu of Waterside showcases an array of Mediterranean cuisine like Grilled Taouk, Yoghurt Marinated Chicken, Charcoal Peppers; Chermoula Garoupa, sweet and spicy Moroccan Fish; Basque Cerveza Mussels with pepperonata, garlic, sun dried tomato; baked Sicilian Tetrazzini; Moussaka; Spanakopita; a selection of Tapas and Paella complemented by a comprehensive list of notable wines from various countries in the world.
Chef de Cuisine Sascha Gausselmann, believes that simplicity, focus on the core ingredient and keeping accompaniments limited is the key to success. Sascha’s unique cooking style captures the true essence, natural flavours and most importantly — the quality of great ingredients like hand-selected meat and fresh produce. Chef Sascha takes a bold step to “elegant simplicity”.
The interiors evoke a rich set of colours, from dark, earthy browns that almost drift to black, nutty tones with a pinch of warm orange and copper hues. This understated tones and neutral shades complement each other and provide the space with harmony. The beige to gold Ducco finish colours, accented with metal tile hood gives the restaurant a modern rustic feel. Waterside offers a unique experience for the diner to relax and celebrate the rich cuisine and culture of the Mediterranean in a rustic elegant setting. The ninety plus seater dining and bar area is decorated with wooden table-chair sets, a unique bar design, lounge style benches, and common tables blending the local vibe with the cultural origins of the cuisine.

Kenneth Cobonpue’s large metal sculpture divides the main dining area from the bar and will certainly catch your eye as you enter the restaurant. The ambiance is further amplified with iron lighting fixtures to set the mood. The Restaurant brings the patrons in their quest for the ultimate culinary experience. The large glass windows allow diners to get a view of the large outdoor pool and lush tropical garden. And most importantly, a panoramic view of the famed Manila Bay sunset.
